As the title says I want to remove the mac address from the end of the SSID, as it looks a bit stupid. How do I do this, I would of thought this would of been done by just simply renaming the SSID but obviously not

If i understand you correct, you mean the SSID which you choose on the Windows Device Portal under "Onboarding"? If so, this can't be changed that easy. The "IoTOnboardingTask" app does read that MAC address from your WiFi adapter and puts it next to your choosen SSID. So you have multiple options: Either you download the source of the IoTOnboardingTask app and then make your changes to it and redeploy it to your device. Or you can remove the IoTOnboardingTask completely from your device and build your own "Onboarding" AP with Wi​FiDirect​Advertisement​Publisher inside a background application.
